RECIPE DESCRIPTION

1. FOR THE PREPARATION
Wash the pineapple. Cut the ends of the pineapple. Using a sole fillet knife, detach the flesh from the skin without cutting the skin. It must be kept whole in order to protect the flesh during cooking. Remove the flesh from the skin.
2. FOR THE MARINADE
Add honey and cinnamon to the pineapple flesh. Divide the marinade over the whole pineapple. Put the flesh back in the skin then place two wooden spikes on each side to block the skin with the flesh. Leave to marinate for at least 1 hour.
3. FOR COOKING
Light the barbecue. Cook the pineapple for at least 15 minutes, turning it regularly. Once the juice starts to come out of the flesh, the pineapple is cooked.
4. FOR TRAINING
Remove the flesh, then cut the pineapple into a 1cm thick slice. The heart of the pineapple can be eaten because cooking has allowed it to soften.
